Baked Mahi Mahi
1 lb frozen mahi mahi fillets
2-3 tbsp. olive oil
1 med onion, chopped
1 garlic clove, minced
1 med green pepper, chopped
14.5 oz can of diced tomatoes
2 tsp. arrowroot powder or cornstarch
3 tbsp. fresh parsley (chopped) or 1 tbsp. dried parsley
½ tsp. dried basil
¼ tsp. black pepper
1. Saute onion, garlic and green pepper in olive oil over medium heat about 5 minutes until soft.
2. Stir in everything else except fish and cook over medium heat 5-10 minutes until thickens.
3. Spread half the sauce in the bottom of a 10×10 baking dish. Layer the fish on top and top with sauce.
4. Bake uncovered at 375 degrees for 10 minutes until flaky.
