Ingredients
1 whole chicken, 3 to 4 lbs. OR 4-5 chicken breasts
4 c. chicken broth
½ onion, chopped
3 cloves garlic, minced
1 zucchini
1 red pepper, chopped
1 can diced tomatoes
1 can diced green chilis
2 tsp. ground cumin
Garlic pepper
Garlic salt
Directions
1. Put tomatoes, green chilis, red pepper, zucchini, onion and garlic in bottom of crockpot.
2. Put chicken in on top and sprinkle spices over top of chicken.
3. Pour in chicken broth.
4. Cook on low for 8 hours.
5. When chicken is finished, remove chicken from crockpot and pick meat off chicken (or shred chicken is using chicken breasts).
6. Return chicken to crockpot and serve.
